Students study carbohydrate, fat, protein,
mineral and vitamin requirements; an overview
of the chemical and biological body functions,
nutrient metabolism and deficiencies, food safety legislation, functions of the Food and Drug
Administration and the USDA. Students
conduct a caloric self-study.
